1. Start Things Off Right: Seaweed-Cured Chalk Stream Trout, Pickled Samphire + Beetroot


Fresh, coastal flavors meet earthy sweetness in this elegant starter. The seaweed-cured trout and briny samphire are balanced beautifully by the vibrant and sweet beetroot. So simple but feels fancy and is still all the right kinds of festive.


Why it Works:The Wild Rose is crisp, refreshing, and bursting with berries; everything you want to lift the bright, zingy flavors of this dish. Its subtle minerality also plays perfectly with the seafood, giving you a pairing that’s as fresh as a winter’s walk by the sea.


Pro Tip: Serve the Wild Rose nice and chilled (about 8–10°C). If you’re short on time, pop it into an ice bucket with half ice, half water for 20–30 minutes.




2. The Main Event: Rolled Mutton with Pistachio Dukkah, Spiced Pumpkin Two Ways + Whipped Feta


For your centerpiece, this rich and hearty dish is an absolute winner. The tender mutton, nutty pistachio dukkah, and warming Middle Eastern spices make it feel indulgent, while the whipped feta adds a creamy, tangy twist.


Why it Works: We can hear you through the screen saying "but wouldn't a red be better?". Well...yeah maybe, but the Dancer in Pink is a real superstar here and shouldn't be overlooked! Its fruity character and gentle creamy texture balance the smoky spices and roasted pumpkin, while its clean, fresh finish cuts through the richness of the whipped feta and mutton. It’s a pairing that feels indulgent, festive, and totally unique.


Pro Tip: Pour about a third to half the glass at first. This allows the wine to breathe, prevents spills, and gives you room to enjoy the aromas. You can always top up!




3. Sweet Treat: Fire-Baked Apples with Oat & Maple Crumb, Cinnamon-Spiced Clotted Cream + Candied Seeds


Perfect Pairing:

Nothing says Christmas like the smell of baked apples wafting through the house. This dessert is a warm, gooey hug on a plate, with caramelised apples, spices, and a dollop of cinnamon-kissed clotted cream.


Why it Works: Classic 2021 and its fine bubbles and brioche notes compliment the cinnamon and oat crumb, while its orchard fruits bring out the natural sweetness of the baked apples. The wine’s bright acidity cuts through the richness of the cream, ensuring a perfectly balanced bite every time.


Pro Tip: If your sparkling wine gets too cold (say below 6°C), you’ll lose a lot of the delicate flavors. Serve it chilled, but not ice-cold, to let the fruity or toasty notes come through.
